Chopped Chicken Liver
Recipe Ingredients:
  • 1 pound chicken lives
  • Salt and pepper
  • 1 large onion, chopped
  • 2 tespoons plus
  • 1 tablespoon oil or schmaltz, divided
  • 3 hard boiled eggs

Wash, trim and salt chicken livers. Place on brolier rack and broil until brown on both sides, turning once. sauté onions in 2 teaspoons oil unitl tender and traslucent, but not brown.

Meat grinder method. Put liver, onions and eggs through grinder. Place in a bowl and add remaining oil. Mix well. Season to taste with salt and pepper.

Food processor method. Process liver, onion and eggs until well mixed, but do not overprocess. Remover from processor to a bowl. Add remaining oil and mix well. Season to taste with salt and pepper.

Variations: Well-trimmed calf or beef liver may be subsituted form chicken livers. Increase oil and needed when combining ingredients.
