Swiss Steak - London Broil Style

Recipe Ingredients:
  • 1 London Broil, about 1 1/2 pounds
  • 1/2 cup all-purpose flour
  • 1 can (14 ounces diced tomatoes with onion and pepper)
Gently pound the steak with a meat tenderizer, using large cube side. Season with salt and pepper, then dredge in the flour. Heat 3 tablespoons of olive oil in a wide sauté pan or skillet with a tight-fitting cover over medium-high heat. When the oil begins to smoke, sear the steak on both sides until browned - about 3 to 4 minutes per side.

Pour off as much oil as you can, add the tomatoes, cover, stirring to scrape up the savory brown bits (important step as these bits really add to the flavoring) from the bottom of the pan. Reduce the heat to a simmer and cook for 45 minutes. Serve the meat with the sauce.

Tip 1: Sauté 1 cup sliced mushrooms in the pan just prior to adding the tomato sauce.

Tip 2: Can be served over wide noodles, fresh mashed potatoes, or rice.
