Iron Pot Roast
From Karil's kitchen

Recipe Ingredients:

  • one 4-5 lb shoulder roast (whole kosher)
  • Flour for dredging
  • 1-2 onions
  • 1 can tomatoes with chilis
  • 1.5 cup beef broth (kosher)
  • 1 lbs baby carrots, or cut whole carrots into 1 inch pieces
  • white potatoes quartered [add according to personal taste]

 

 

Brown flour coated roast in peanut oil

Dice onions and sauté after roast is browned

Replace roast over onions

Pour can of tomato/chili over top of roast

Add beef broth around roast

Simmer roast until tender

Add carrots and potatoes and any other vegetable you want.

Usually takes about 3-4 hours for the completion.

Karil's kitchen: I use a cast iron pot for this ... adds to the flavor. However any large pot will suffice.
