Matzo-Mushroom
Stuffing |
Recipe Ingredients:

8 matzos
-
1 1/2 cup hot
chicken stock
-
5 Tb Olive oil
-
2 large
onions, chopped
-
salt and
pepper to taste
-
8 oz
mushrooms, quartered
-
4 large garlic
cloves, chopped

3 eggs, beaten
-
1/3 cup
chopped parsley

In a large
bowl, mix crushed matzos in hot chicken
stock.
Heat 2 Tb Olive oil in skillet. Sauté onions
and chopped garlic until
transparent and lightly golden in color. Set
aside in bowl.
Heat rest of olive oil in skillet and sauté
mushroom pieces until lightly
cooked.
Add sautéed onions/garlic to matzo/chicken
stock in the large bowl.
Add sautéed mushrooms, beaten eggs, salt &
pepper and chopped parsley.
Fold all ingredients well.
Use stuffing to stuff Cornish hens or
chicken or bake in a casserole dish
and use as a side dish. |
