Beet Latkes (D) |

1 cup beets
finely chopped

4 large egg yolks, beaten

3 Tablespoons heavy cream or undiluted
evaporated milk

2 Tablespoons cornstarch

1/2 teaspoon sugar

1/2 teaspoon ground nutmeg

1 teaspoon salt
Combine all ingredients in a mixing bowl.
Fry in heavy skillet (in oil) Serve with
marmalade. Apple sauce or sour cream would
work too.
