 Beet Latkes (D)
  • 1 cup beets finely chopped
  • 4 large egg yolks, beaten
  • 3 Tablespoons heavy cream or undiluted evaporated milk
  • 2 Tablespoons cornstarch
  • 1/2 teaspoon sugar
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon salt

    Combine all ingredients in a mixing bowl.  Fry in heavy skillet (in oil) Serve with marmalade. Apple sauce or sour cream would work too.
