Pareve Simcha Noodle Kugel
Serves: 8-10
Recipe Ingredients:
  • 1 pound egg noodles
  • 1 cup raisins
  • 1/2 stick unsalted pareve margarine - melted
  • 3 eggs
  • 1 8-oz can crushed pineapple in juice -- drained
  • 2/3 cup sugar
  • 1/8 teaspoon vanilla
  • 1/8 teaspoon nutmeg -- freshly grated is best
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsweetened applesauce
  • cooking spray
This kugel is sweet enough for a breakfast treat with a cup of coffee but it goes well with roast chicken or brisket

Directions

Cook noodles according to package directions, minus 2 minutes. While noodles cook, soak raisins in melted margarine. Drain noodles and set aside

In a large bowl, combine eggs, raisins and margarine, pineapple, applesauce, sugar, nutmeg, vanilla, salt and cinnamon. Add noodles and mix until well blended.

Spray a baking pan with cooking spray. Pour mixture into pan and bake at 350 degrees until top is lightly browned and a toothpick inserted in center comes out dry, about 1 hour.
