Cherry Kugel Gail Ashkanazi-Hankin

This dessert recipe was developed and tested by Gail Ashkanazi-Hankin, author of Festivals of Lite Kosher Cookbook. Try it, you'll be amazed at the wonderful flavor.

Ingredients:
  • 11 oz GRANDMA'S Frozen Wide Egg Noodles
  • 1/2 cup plus 2 Tbs egg substitute
  • 1 whole egg
  • 1/2 cup pineapple juice concentrate
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 tsp cinnamon, divided
  • Dash of salt
  • 1 15 oz can dark pitted cherries, drained
Prepare GRANDMA'S Noodles using directions on package. Combine egg substitute, egg, juice concentrate, water, extracts and 1/2 tsp cinnamon in large bowl, stirring well. Add cooked and drained noodles. Stir in cherries and spoon into greased 11 x 7 baking dish. Sprinkle with remaining cinnamon. Cover loosely with foil and bake for 30 minutes at 350 degrees. Remove foil and continue baking 30 more minutes. Let rest at least 15 minutes before serving. Serves 6. Enjoy!
