Recipe Ingredients:

6 boneless chicken breasts
cubed

4 red and/or yellow bell
peppers, cut into 1-inch
chunks

2 cans unsweetened pineapple
chunks (reserve juice for
marinade)

2 red onions cut into chunks
Marinade

1 cup pineapple juice
-
1/2 cup freshly squeezed
lemon juice
-
2 tsp. cumin
-
2 tsp. coriander
-
1 tsp. minced garlic
-
2 tsp salt
-
2 Tbsp. minced fresh
clinatro

Makes 12
Thoroughly combine marinade
ingredients. Add chicken
cubes and refrigerate
overnight for best flavor
(or at least 4 hours).
If using wooden skewers soak
in water for 30 minutes
before using. Place a mix of
vegetables and chicken on
each skewer; discard all but
1/4 cup marinade. Grill
10-15 minutes turning once
basting with reserved
marinade halfway through.
