In a small bowl, whisk
together all the marinade
ingredients.
Taste and adjust season as
necessary.
Pound the chicken breast slightly between two sheets of plastic
wrap. Arrange them in
a large, shallow baking pan
and pour the marinade over
them, turning to coast
evenly. Cover and
refrigerate 2-4 hours,
turning several times.
Combine all salsa
ingredients
and set aside.
Removed the chicken from the
marinade and place on grill
rack. Grill, turning
once. 7-10 minutes on
each side, or until juices
run clear.
Alternatively, broil 7-10
minutes on each side.
To serve, place chicken on
plates and top with mango
salsa. For a picnic or
a more casual meal, serve
chicken and salsa in lightly
toasted pita.
