Chinese Chicken Salad
  • 2 Kosher chicken breasts
  • 4 tablespoons sesame seeds, toasted
  • 4 tablespoons slivered almonds, toasted
  • 1 head Chinese Napa cabbage, sliced thin
  • 2 green onions, chopped
  • 1 package instant noodles (Ramen)
  • 2 Tablespoons sugar
  • 1/2 cup salad oil
  • 1 to 2 teaspoons salt
  • 1/2 teaspoon white pepper
  • 6 tablespoons Japanese or white vinegar or half of each

Grill or microwave chicken, slice

Combine chicken, toasted sesame seeds, almonds, cabbage, chopped onion and noodles (uncooked and broken into pieces). Do not use the noodle seasoning mix.

Combine remaining ingredients into dressing and pour over salad.

This is also excellent served the second day.
