Barbecued Orange Chicken
Meat 10 servings
 
Recipe Ingredients:
  • 2 chickens, halved
  • 2 tablespoons pareve margarine, softened
  • salt and pepper to taste
  • 1 (12 ounce) can frozen orange juice concentrate, thawed
  • 1 cup firmly packed brown sugar
  • 1 1/2 cups bottle barbecue sauce

Arrange chicken, skin side up, in a large baking dish and rub with margarine. Season with salt and pepper to taste. Bake in preheated 350 degree oven for 30 minutes. Turn chicken. Combine remaining ingredients. Pour half over chicken. Bake an additional 30 minutes, then turn again and top with remaining sauce. Bake until brown, about 30 more minutes, basting occasionally.

Variation: Also great with Cornish hens.
