Z'Houg (Yemenite Green Chili Paste)

Recipe Ingredients:

  • 1 cup fresh cilantro leaf or flat-leaf parsley leaves
  • 3 teaspoons black peppercorns
  • 1 teaspoon carraway seeds
  • 8 cloves
  • 8 cardamon pods
  • 1 teaspoon salt
  • 8 garlic cloves
  • 1/4 pound green chili peppers, such as jalapeno or serrano
  • 3 tablespoons olive oil

Makes about 2 cups

Combine all ingredients in a blender or food processor and process to a rough paste. Transfer to a tightly closed jar and refrigerate until ready to use. It will keep in the refrigerator for several weeks.

Use to flavor stew or serve as an accompaniment with grilled fish and meats or with the many varieties of Yemenite bread.
