Alpine Marinated Goat Cheese
10 servings
Recipe Ingredients:
  • 1 (12 ounce) log goat cheese
  • 1/2 cup extra virgin olive oil
  • 1 1/2 teaspoons dried chervil
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon crushed dried rosemary
  • 2 medium cloves garlic, peeled and pressed
  • sun-dried tomatoes, optional
  • roasted red peppers, optional

Appetizers

Slice cheese into 1/2 inch rounds with a very sharp knife dipped in hot water between each slice. Place slices on a shallow serving platter.

Whisk together olive oil, herbs and garlic. Spoon over cheese. Refrigerate, covered, for at least several hours, but preferably 8.

Return to room temperature before serving, basting with marinade occasionally. Garnish with sun-dried tomatoes or roasted red pepper, if desired.

Serve with water crackers or thinly sliced French bread.

Hint: Save any crumbled cheese for use in your next green salad, along with any extra marinade.
