Corned Beef and Potato Knish Filling

Ingredients:
  • 2 onions, quartered
  • 3 TB oil
  • 1 lb corned beef
  • 2 medium potatoes, boiled and mashed
  • 2 eggs
  • salt and pepper to taste
  • (I add dry mustard too)

Chop onions and sauté until golden. Chop the meat and mix with remaining ingredients. makes about 3 cups filling. May be frozen.

 

 
Cooking Tips:   If you plan to freeze the knish, bake 30 minutes and allow to cool.
