Cheese Knishes
Makes about 30

 

Ingredients:

Dough:

  • 2 cup Sifted flour
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1 Egg beaten
  • 1/2 cup Sour cream
  • 1 tbl Melted butter

FILLING:

  • 1/2 lb Dry cottage cheese
  • 2 tbl Sour cream
  • 2 tbl Bread crumbs
  • 1 tbl Sugar
  • 1 tbl Melted butter
  • 2 Eggs beaten
  • 1/4 cup Seedless raisins
Dough: Sift together dry ingredients; Add egg; sour cream, and butter. Blend thoroughly and knead well. Roll out and stretch to a thin dough and fill one end and roll up in long strips (Length of pan) or make individual pockets (knishes)

Filling: Combine all together, and fill.

Place on a shallow baking pan that has been liberally greased with butter (melted) .

Bake at 350 degrees for 1 hour or until lightly browned; basting occasionally with melted butter.
