Horseradish
Recipe Ingredients:
  • 1 Large horseradish root, peeled and cut into pieces
  • 2 large beets, peeled and quartered
  • 2/3 Cup white vinegar
  • 2 heaping tablespoons sugar, or more to taste
  • dash
  • 1/4 to 1/2 cup of water

Shred horseradish in food processor. Remove from work bowl. Shred beets in processor. Return horseradish to work bowl and add remaining ingredients. Pulse several times.

Gradually add water, as needed, to reach a find consistency. Place in a glass jar, cover and refrigerate.

About 20 years ago, we purchased one small horserdish root at a grocery store for our seder. We planted it, and now we could provide our entire synagogue with horseradish! Just stick a piece into the ground where you have a lot of room and want some green. It will keep on coming back every year.
