Homemade Gefilte Fish

Recipe Ingredients:

  • 5 pounds fish filet (carp, buffalo, whitefish, and pike), mixed to taste, heads and bones reserved
  • 3 medium yellow onions
  • 10 eggs
  • 1 tablespoon kosher salt
  • 2 teaspoons pepper
  • 2 tablespoons sugar
  • 1/2 cup matzo meal

Broth:

  • 3 onions
  • 3 large carrots
  • 4 stalks celery
  • salt, pepper and sugar

Note: Whitefish and pike are milder than buffalo and carp.

Have your fishmonger remove heads and bones from enough fish to net 5 pounds of fish filet. Rinse thoroughly and reserve heads and bones for broth. Grind fish and onion. Place in a large bowl and add eggs, seasoning and matzo meal. Gradually add water. Combined thoroughly. Add more seasonings and water if needed. Knead mixture until firm enough to form oval balls 2 1/2 inches in diameter.

For broth, place reserve fish heads and bones in large stockpot. Add vegetables and half-fill with water. Add seasonings to taste. Bring water to boil, reduce heat to medium and cook for about 4 hours. Correct seasonings, and add additional water as needed. Remove fish from broth and cool. Serve with horseradish and challah.
