Toasted Farfel (p. 76):
from: Let my People Eat Passover Seders Made Simple by Zell Schulman
Ingredients:
  • 1 C. Farfel, or 2 to 3 matzos broken into small pieces
  • 2 t. olive oil
  • 1/4 t. cracked black pepper
  • 2 t. chopped fresh herbs, such as oregano, basil, garlic, or chives

Passover Seders Made Simple

Makes approximately 1 Cup

(These "Passover croutons" are not only a great addition to soups but also make an addictive "nosh."

Preheat the oven to 375 degrees F. In a large bowl, mix all the ingredients together with a fork. Spread the mixture evenly in a shallow pan. Bake for 15 minutes, until golden in color, stirring with a wooden spoon every 10 minutes. Store in an airtight, sealed bag or freeze until ready to use.
