Red Pepper + Onion Topped Cheese Tart

Recipe Ingredients:

  • 1 large red pepper, cut into 1/2 inch strips
  • 1/2 medium red onion, sliced and cut into 1/2 inch strips
  • Olive Oil
  • 15 oz. part-skim ricotta cheese
  • 8 oz. shredded mild white cheddar cheese
  • 6 eggs, beaten
  • 1 Tbsp. dried parsley
  • 2 tsp. dill
  • 1 tsp. onion powder
  • Salt and pepper to taste

Serves 8

Preheat oven to 350 degrees. Sauté peppers and onions in oil until slightly softened; season lightly with salt. In large bowl, combine remaining ingredients.

Place cheese mixture in a 10-inch fluted tart pan (with removable bottom) that has been sprayed with nonstick cooking spray. Top with peppers and onions. Bake for about 1 hour, until firm in center. Cover with foil after about 30 minutes to prevent vegetables from burning.
