Recipe Ingredients:

1 large red pepper, cut
into 1/2 inch strips

1/2 medium red onion,
sliced and cut into 1/2
inch strips

Olive Oil

15 oz. part-skim ricotta
cheese
-
8 oz. shredded mild white
cheddar cheese

6 eggs, beaten
-
1 Tbsp. dried parsley
-
2 tsp. dill
-
1 tsp. onion powder
-
Salt and pepper to taste

Serves 8
Preheat oven to 350 degrees.
Sauté peppers and onions in
oil until slightly softened;
season lightly with salt. In
large bowl, combine
remaining ingredients.
Place cheese mixture in a
10-inch fluted tart pan
(with removable bottom) that
has been sprayed with
nonstick cooking spray. Top
with peppers and onions.
Bake for about 1 hour, until
firm in center. Cover with
foil after about 30 minutes
to prevent vegetables from
burning. |
