Sephardic Candied Quince
Recipe Ingredients:
  • 1 fresh quince
  • 1 1/2 cups sugar
  • 1 1/2 cups water
Core and peel the quince. Cut it into thin slices. Pour the water and sugar into a heavy pot. Cook over medium heat while stirring until the sugar completely dissolves into the water. Add the quince and simmer for 45 minutes. The quince slices will be soft and have a rich golden red color.

Cooking Tips:   This cake can be made ahead a few days and is still moist and yummy.
Be sure to arrange the apples away from the edges of the pan so that
when the pan is removed the integrity of the cake is not compromised.
