Chocolate No-Bake Cookies
 Dairy / Parve
Ingredients:
  • 2 c sugar
  • 1/2 c vegetable oil (or pareve margarine or butter)
  • 1/3 c skim milk (soy milk)
  • 3 c oatmeal -- uncooked
  • 6 Tbsp cocoa
  • 1 c coconut

Mix sugar, oil and milk in saucepan. Bring to a full boil. Boil for 3-5 minutes stirring constantly.

Mix oatmeal, cocoa and coconut in large mixing bowl.

Add sugar mixture, mix together.

Spoon onto waxed paper.

Cooking Tips:   These are better if you use Quick Cooking oatmeal rather than regular oatmeal.  I have also tried making these with non-dairy creamer and they are good but crumbly.
