Jewish Recipes --> Recipes --> Candy Recipes --> Kosher Fudge

Creamy Fudge (D)
Yield: 8" square pan
Recipe Ingredients:
  • Butter
  • 16-ounce package semisweet chocolate pieces
  • 2 3-ounce packages cream cheese
  • 4 cups powdered sugar, sifted
  • Dash salt
  • 1 teaspoon vanilla
  • 1/2 cup walnuts, chopped
  • Take out:
  • waxed paper
  • 8"x8"x2" pan
  • double boiler
  • mixing bowl
  • wooden spoon
  • measuring cups and spoons
  • rubber spatula
  • knife

Lightly butter square pan. Put 2" water in the bottom of double boiler. Bring water to boiling.

Melt chocolate pieces in top of double boiler. Have the cream cheese at room temperature. Put cream cheese in a bowl.

Use wooden spoon to break up the cream cheese. Rub cheese against the bowl to soften; beat cheese until it is smooth.

Gradually stir in half of the sifted powdered sugar, salt, and the vanilla. Stir the mixture carefully.

Using a rubber spatula, pour melted chocolate into cheese mixture. Mix well. Add remaining sugar and nuts.

Press mixture into square pan. Chill in refrigerator until it is firm. Cut in squares. Top each piece with nut half, if you wish.
