Serves 10 - 12
Preheat oven to 350 degrees.
Liberally grease a tube pan.
Beat egg yolks until thick
and lemon colored; gradually
beat in extra-fine sugar.
Add wine and mix well.
Combine nuts with cake meal
and add to egg mixture. Beat
egg whites until stiff and
fold carefully into egg yolk
mixture.
Pour into tube pan.
Bake for 1-1 1/4 hours.
While cake is baking. blend
granulated sugar, potato
starch, and salt in
saucepan.
Add orange zest and
gradually stir in orange
juice. Cook over low heat,
stirring constantly, until
mixture thickens.
When cake is done, invert
pan to cool. When completely
cool, remove from pan and
sift powdered sugar over
entire surface. Before
serving, top each piece with
sauce. |
