Rosh Hashanah Apple Cake - parve
Recipe Ingredients:
  • 3 cups flour
  • 2 cups sugar
  • 1 cup oil
  • 4 eggs
  • 2 tsp vanilla
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup orange juice

Filling:

  • 5 large Golden Delicious apples, peeled and thinly sliced
  • 3 tbsp sugar
  • 2 tsp cinnamon

Directions

Beat sugar, oil and eggs. Add flour, vanilla and baking powder, salt and orange juice in a large bowl. Batter will be thick but pourable.

Peel and slice apples and combine with sugar and cinnamon.

Place 1/2 batter in tube pan, add 1/2 apples, 1/2 batter and then the remaining apples.

Bake at 350F 1 1/2 hours or until tested done. Top may appear moist.

This cake freezes well
