Honey Cake Parve
Recipe Ingredients:
  • 2.5 cups flour
  • 4 large eggs
  • 1 cup boiling water
  • 1 Tbsp. instant coffee
  • 1 tsp. baking soda
  • 1 cup white sugar
  • ½ cup light brown sugar
  • ¾ cup oil
  • 1 cup honey
  • 1 Tbsp. lemon juice
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • ¼ tsp ginger
  • ¼ tsp. nutmeg

Preheat oven to 325. Spray pans. Pour water into a 2 cup measuring cup. Add coffee and set aside. Add the baking soda (it will bubble) Place eggs, sugars, oil, honey and lemon juice in mixer bowl. Beat until the sugars are dissolved and the batter is thick and creamy (about 3 minutes). Place the flour, baking powder, cinnamon, ginger and nutmeg into a large bowl. Use a spoon to mix. Add to the mixer bowl, the flour mixture, alternating with the coffee mixture. When the batter is smooth (don’t over beat), pour it into the pans, filing them 2/3 full. Bake for 1 hour or 1 hour and 15 minutes. Cool in pan on rack.

Yields: 1 tube pan, or 3 mini loaves, or 3 8” round pans.
