2 cups flour

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon salt

4 cups chopped, cored, unpeeled apples such
as Jonathan

1 1/2 cup sugar

1.2 cup oil

2 large eggs, beaten

2 teaspoons vanilla

1 cup chopped nuts

1/2 cup raisins (optional)
Heat oven to 350 degrees. Lightly grease a 9
x 13 baking pan.
Mix flour, baking soda, cinnamon and salt in
bowl. Mix apples and sugar in large bowl.
Stir in oil and mix well. Stir in eggs,
vanilla and nuts. Add flour mixture and
raisins. Stir just until moistened.
Scrape into prepared pan. Bake until
toothpick inserted in center comes out clean
and cake has pulled away from sides of pan.
(30-40 minutes)
Cool on wire rack.
