Uncle Leo's Lox, Eggs, and Onions
Source: Beni's Family Cookbook for the Jewish Holidays
Yield: One omelets
Recipe Ingredients:
  • Slice of lox, diced
  • 1/2 small onion, chopped
  • Margarine
  • Pinch of pepper
  • 2 large eggs, beaten
Sauté lox and onion with margarine in a pan over low flame until onions are soft and translucent and lox is thoroughly cooked. Sprinkle with pepper.

Pour beaten eggs over mixture. Do not stir. Allow to simmer. When the bottom is firm, flip over and cook the other side for a minute until eggs appear solid.
