Ingredients: |

8 eggs

½ teaspoon salt

1 tablespoon butter

10-inch flour tortillas, wrapped in a clean
kitchen cloth and warmed in the microwave

½ cup shredded Cheddar or Monterey Jack
cheese

4 thin vegetarian sausage links, cooked

2 cups of your favorite tomato salsa

¼ cup sour cream

1) Whisk
together the eggs, salt and black pepper to
taste, in mixing bowl.
2) Preheat a large non-stick pan over
medium-high heat. 3) Pour in the eggs and
cook, stirring gently until eggs set.
3) Unwrap the tortillas and place ¼ of the
eggs, a sausage and 1 tablespoon of salsa in
the center of the tortilla.
4) Fold the edge of the tortilla closest to
you over the filling. Fold in the sides and
then the top to form a package. Repeat with
the remaining tortillas.
Serve with extra salsa and sour cream. |
