Ingredients: |

4 ounces Monterey Jack cheese, cut into
1-inch cubes

8 large eggs
-
1 tablespoon butter
-
1 red pepper, diced
-
Salt
-
Black pepper
-
4 large flour tortillas
-
Your favorite brand mild salsa

Place cheese
in the blender jar or food processor bowl.
Cover and process until coarsely chopped.
Remove to small bowl.
Add the eggs to the blender or food
processor. Cover and blend until combined.
Heat butter in a large nonstick sauté pan
over medium heat. Add red peppers. Cook
until soft. Add eggs. Season with salt and
black pepper, to taste. Cook until set, but
still soft.
Spread salsa on each tortilla to completely
cover. Spoon eggs onto half of each
tortilla. Sprinkle with shredded cheese.
Fold in half. Place in the sauté pan and
heat on each side until the tortilla is
lightly toasted and the cheese is melted. |
