Shoshanah's Blintzes
"Bletlach" (crepe pancake)
Ingredients:
  • 6 eggs
  • 6 tablespoons Potato Starch "scant"
  • 1 cup water
  • 1 tablespoon oil

    Filling:
     
  • 1 1/2 pounds farmer's cheese
  • 1/2 pound cream cheese
  • 1/2 cup sugar
  • 1 tablespoon melted butter
  • cinnamon
Beat eggs, add water and oil. Add potato starch a little at a time and beat. Let stand a while.

Wipe a 9 inch frying pan with a little bit of oil and heat.

Use about 1/3 cup bletlach mixture - pour into pan, rotating pan quickly so that it distributes evenly. (should not be thick). When it starts to brown on bottom, flip out of pan onto sheet of wax paper (brown side up).

Fill pancakes with filling, folding envelope style. Brown on folded side first, then turn and brown on other side.

Each time you make the "pancake" stir the mixture.
