Bite Size Blintz Cups

Recipe Ingredients:

18 premade 6-inch crepes

Filling

  • 1 lb. farmer cheese
  • 1 3-oz. package cream cheese
  • 1 egg yoke
  • 1/4 cup sugar
  • 1 Tbsp. lemon juice
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla

Topping

  • Sour cream
  • Cinnamon

Makes 15 - 18

Preheat oven to 350 degrees. Thoroughly combine filling ingredients. Taste and adjust seasonings as needed.

To assemble, place crepes in muffin cups. Pour filling in until cups are about two-thirds full. Fold crepe edges over the filling. Bake for about 20 minutes, until filling is set. Top each blintz cup with a small dollop of sour cream and a sprinkle of cinnamon.
