Deluxe Bean Salad
Serves 6
Recipe Ingredients:

Dressing:

  • 1/2 cup sugar
  • 1/3 cup extra-virgin olive oil or canola oil
  • 3/4 cup cider vinegar or half balsamic vinegar and half cider vinegar
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon garlic salt (optional)
  • 1/2 teaspoon oregano (optional)

Salad:

  • 1 (14-ounce) can green beans, drained
  • 1 (14-ounce) can yellow wax beans, drained
  • 1 (14-ounce) can white shoepeg corn, drained
  • 1 (7-ounce) can small peas, drained (I prefer to use petite frozen peas)
  • 6 ounces pitted medium black olives, drained
  • 6 ounces green olives with pimientos, drained
  • 1 cup chopped red or white onion
  • 1 cup chopped celery
  • 1 cup chopped peppers (red, green, yellow, orange, or a combination)
Preparation:

To make the dressing: In a small saucepan, mix together sugar, oil, vinegar(s), pepper and oregano, if using. Bring to a boil. Boil 1 minute, and remove from heat. Let cool to room temperature.

While dressing is cooling, in a large bowl or container with a lid, mix together green beans, wax beans, corn, peas, black and green olives, onion, celery and peppers. Add the room-temperature dressing and mix well. Cover tightly and refrigerate overnight. When ready to serve, taste and adjust seasonings, if necessary.
