Rosh Hashanah Appetizer
Marinated Mushrooms
6 to 8 servings
Recipe Ingredients:
  • 1 pound button mushrooms
  • 1 small onion
  • 2 cups red wine vinaigrette
Wash the mushrooms and thoroughly pat dry; cut off the bottom of each stem. If the mushrooms are large, cut them in halves or quarters. Put the mushrooms in a mixing bowl. Peel the onion and dice it small.

Put the onion in a small saucepan and add the vinaigrette. Cook over medium heat for 6 to 8 minutes, bringing it just to a boil. Pour the hot vinaigrette over the mushrooms and toss to coat well. Refrigerate overnight.

TIP: A clove of minced garlic will spice these up nicely.
