- 1 or 2
tofu blocks, 16 oz each
- 3
onions, sliced or diced.
- 2
cloves, garlic, minced
- 1
carrot, shredded
- 1 stalk
celery, diced
- 1 green
pepper
- 2-3
tablespoons of butter or margarine
(depending on your cardiac and taste
status)
- 2
teaspoons of salt
- 1/2
teaspoon of paprika
- 2 large
bay leaves
- 10
peppercorns
- 1 tiny
red pepper
- 1 1/2
cups of tomato or V-8 juice
- 2
tablespoons of brown sugar
Cut tofu
into whatever kind of slices you like (I
slice it widthwise). Take each slice and
lightly fry on each side in a pan, until
golden brown.
While
you're browning the tofu add the remaining
ingredients to a large pot which the bottom
has been coated with olive oil.
Add the
browned tofu with the other ingredients. If
you like, add Portobello mushrooms to taste.
Cover and
simmer for 1 1/2 to 2 hours.
Serve with
the gravy from pot. |
