Avocado Sandwich
Recipe Ingredients:
  • 1 slice toasted whole wheat bread
  • 1/2 avocado mashed up
  • 2 slices tomato about 1/4 inch thick (or thinner)
  • 1/4 cup shredded mozzarella cheese

Put tin foil on a baking sheet to make clean up easier. Spread mashed avocado on toast, season with salt and pepper if desired. Add tomato slices and top with cheese.

Place under the broiler until cheese is melted and bubbly. I prefer to let the cheese begin to turn brown before taking it out.

Serve with a piece of fruit and this is a fast, easy and nutritious breakfast to start your day.

To serve this sandwich during Passover, substitute one piece of matzah for the whole wheat bread.
