Celery Salsa
a perfect side dish for salmon cakes
Ingredients:
  • 3 ribs celery, bothersome strings removed, then diced
  • 1/2 cup finely chopped onion
  • 1/2 cup finely sliced green onion
  • 1 jalapeno pepper, finely diced
  • 1/2 teaspoon fine sea salt
  • zest of 1 lime
  • juice of 1 lime
  • 1 teaspoon brown sugar crystals
  • 1 banana, sliced and diced
Chop and dice the celery, onion, green onion, and jalapeno using a sharp chefs knife or food processor. Pour into a beautiful serving bowl, add salt, zest, juice, sugar and the diced banana. Toss, taste, adjust seasonings as desired and serve.
