Passover vegetable Casserole
Recipe Ingredients:
  • 6 matzos, crushed, or 3 cups matzo farfel
  • 1/3 cup vegetable oil
  • 1 large onion, diced
  • 2 cloves garlic, crushed
  • 1 red bell pepper, seeded and diced
  • 2 small summer squash, diced
  • 2 small zucchini, diced
  • 1 small eggplant, diced
  • 1 large carrot, grated
  • 1/2 pound mushrooms, sliced
  • 2 stalks celery, diced
  • 2 teaspoons salt, divided
  • 1/2 teaspoons pepper, divided
  • 4 eggs

Note: can prepare 1 to 2 days in advance. Refrigerate uncooked.

Place matzo in a large bowl and add enough hot water to cover. Let sit 5 minutes, then drain in a colander. Heat oil over medium-high heat in a larger skillet.

sauté onions 2 minutes and add garlic and remaining vegetables. sauté 2 more minutes. Add 1 teaspoon salt and 1/4 teaspoon pepper. Cover and simmer over medium heat until vegetables are soft, stirring frequently, about 15 minutes. Remove from heat and cool slightly. Beat eggs in a large bowl with remaining salt and pepper. Add matzo and vegetables and stir to combine. Turn into a well-greased 9 x 13 inched glass baking dish.

Bake in preheated 350 degree oven until well browned, 45 minutes to 1 hour.

Cooking Tips:   Casserole

This term refers to both a baking dish and the ingredients it contains. Casserole cookery is convenient because the ingredients are cooked and served in the same dish. A "casserole dish" usually refers to a deep, round, ovenproof container with handles and a tight-fitting lid. It can be glass, metal, ceramic or any other heatproof material. A casserole's ingredients can include meat, vegetables, beans, rice and anything else the cook desires. Often a topping such as cheese or breadcrumbs is added for texture and flavor.
