Ingredients:
- 3 C. sliced cooked carrots
- 1/3 C. orange juice
- 1/4 C. sherry
- One 17-oz. can sweet potatoes, sliced
- 1/3 C. honey
- 1/2 C. pineapple preserves
- 8 pitted prunes, quartered
- 8 dried apricots, quartered
- 1/4 t/ ground ginger
- 1 T. sugar
- 1/8 t. ground cinnamon
- Pinch of salt

Passover Seders Made Simple |
(Makes 6 to 8 servings)
1. Preheat the oven to 300 degrees F. Drain
the carrots and place them in a large bowl.
Add the remaining ingredients. Gently mix
everything together.
2. Transfer to a greased 2-quart casserole.
Bake, covered, for 2 1/2 to 3 hours, until
heated through.
Serve warm. |
