Carrot-Yam Tzimmes (p. 160)
from: Let my People Eat Passover Seders Made Simple by Zell Schulman
Ingredients:
  • 3 C. sliced cooked carrots
  • 1/3 C. orange juice
  • 1/4 C. sherry
  • One 17-oz. can sweet potatoes, sliced
  • 1/3 C. honey
  • 1/2 C. pineapple preserves
  • 8 pitted prunes, quartered
  • 8 dried apricots, quartered
  • 1/4 t/ ground ginger
  • 1 T. sugar
  • 1/8 t. ground cinnamon
  • Pinch of salt

Passover Seders Made Simple
(Makes 6 to 8 servings)


1. Preheat the oven to 300 degrees F. Drain the carrots and place them in a large bowl. Add the remaining ingredients. Gently mix everything together.

2. Transfer to a greased 2-quart casserole. Bake, covered, for 2 1/2 to 3 hours, until heated through.
Serve warm.

With its heavenly mixture of carrots, sweet potato, fruit and honey, this is a perfect sweet-side-dish for a
sweet-new-year Rosh Hashanah festive meal!
