Roasted Salt and Sichuan Peppercorns
Makes half CUP
Ingredients:
  • 1/2 Cup kosher salt
  • 2 tablespoons Sichuan peppercorns
1. Put the salt and peppercorns in a small, dry skillet. Over medium heat shake the skillet and toss the ingredients until the salt browns slightly and the peppercorns become fragrant, about four (4) minutes.

2. Cool, then grind the mixture in a blender or spice mill. Strain through a sieve. Store in a covered jar.

Served as a dry dip with other main meals.
