Rhubarb Custard Pie
Recipe Ingredients:

Can use either a regular pie crust or graham cracker crust.

  • 3 eggs, beaten slightly
  • 3 tablespoons milk, add to slightly beaten egg

Mix together:

  • 1 1/2 cup sugar
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 4 cups diced rhubarb
Stir this into the egg and milk mixture. Pour into pie shell, dot with butter and bake at 400 degrees for 50-60 minutes.
